First off put the carrots in the fridge you wont need them.

Go out and buy some dry fajita package seasoning and some tortilla's a tomato and a Tomatillo.

Cut up half a green pepper into small pieces, and put into a bowl.
Cut up all the tomato into small pieces and put into a bowl.
Cut up half the onions into small pieces and put into a bowl.
Cut up the top half the cilantro into small pieces and put into a bowl. Save the long stems for later.
Cut up all the tomatillo into small pieces and put into a bowl now put that into the fridge.

Congrats you made some Pico de mayo. Put off to the side to use as topping later.

(Extra but not necessary - Cut 1 piece of bacon and cook in frying pan before adding everything else)

Now make the steaks half frozen and cut them into the thinnest pieces you can like a half inch by 3-4 inches.

Cut 1 and a half green peppers into long pieces put in frying pan.
Put the leftover cilantro stems into frying pan.
Cut half the onions and put into frying pan.
Put the steak slices into the pan.
Put the fajita seasoning into pan.
Fill the fajita package halfway with water add into pan.
Put 1 tablespoon of the pico de mayo on top.
Put a lid on, Simmer for about 1-2 hours until meat is very tender.

Heat up tortilla's.

Put everything in the tortilla from pan and Pico de mayo.

Congrats you have made the best carni asada!

Sesame and Cilantro Vermicelli Salad Recipe

INGREDIENTS
Honey Soy Dressing:

1/4 cup grapeseed oil or corn oil
3 Tbsp dark sesame oil
1/2 teaspoon crushed dried red pepper or chili powder
3 Tbsp honey
2 Tbsp soy sauce (less if using tamari which is more concentrated than soy sauce)
Salad:

8 ounces of vermicelli, thin spaghetti, or angel hair pasta
Salt
1/2 cup coarsely chopped cilantro
1/4 cup chopped roasted peanuts
1/4 cup thinly sliced green onions
1/4 cup sliced and chopped red bell pepper
1 Tbsp toasted sesame seeds
METHOD
1 Cook the pasta in a large saucepan in salted boiling water, according to directions on pasta package. Drain but do not rinse.

2 While the pasta is cooking, prepare the dressing. In a microwave-safe dish, heat the vegetable oil, sesame oil, and red pepper, in the microwave on high heat for 2 minutes. Add the honey and soy sauce and mix well.

3 Combine the drained pasta with the dressing in a large bowl until the pasta is well coated. Cover and chill for several hours.

4 When ready to serve, mix in the cilantro, peanuts, green onions and bell pepper. Garnish with toasted sesame seeds.

Yield: Serves 4 to 8.

3: Cook the meat at 160 degrees in the oven
4: When the meat is done put the meat into the pepper
5: Sprinkle cilantro onto the meat
6: Make a separate plate for carrots for a side dish

Most ovens dont go under 300 degrees, this would be better done on a stove in a pan, without a specific temperature. With this kind of meat, you would just need to cook it on the stove until there isnt any more pink (If you grind it up).

That would be spicy carni asada. I honestly don't like spicy foods too much. This is my own family recipe, we make this once every couple weeks when we got the money to buy steaks.

Marinade & Meat:
In large Ziploc bag, combine:
1 bunch chopped green scallions/onions
2 tbsp chopped cilantro
1 tbsp salt
1/2 cup Orange juice
1/4 cup tamari/soy sauce
1/4 cup balsamic vinegar
add meat, press out air & seal. Put in fridge 4-6 hours. Remove meat from bag. Score 3 1" slits in each piece of meat. Press one partly crushed garlic clove in each slit. Pour marinade over meat, grill or broil meat to desired doneness, about 5-6 min each side for medium rare.

Carrots:
Steam carrots until al dente-softened but still crisp. In small pan, melt 3 tbsp butter, mix in 2 tbsp honey, 4 chopped scallions, 3 tbsp orange juice & reduce on simmer until it thickens, remove from heat & toss steamed carrots in sauce. Sprinkle brown sugar or crushed almonds over before hot.

Add green salad on the side.
