My slightly pretentious ramen recipe made with ingredients that I steal from work;
Broth
-4 oz of dried kombu (thick kelp)
-Chicken/beef bone, ox tail or marrow
-Homemade veggie stock
-Dried Shiitake mushroom (about a handful)
-Green onions or Leeks
-Rice wine and rice wine vinegar
-Miso Paste to taste
*Let all this shit simmer, the longer the better. Then strain it*
Use whatever noodles you want since the broth is where 99% of the flavor comes from. Add pork belly, seaweed, kimchi, beansprouts, hard boiled eggs, fish cakes, or really whatever you want.

ramen in da pot, boil 2 minutes, slowly stir in one scrabled egg over noddles. Be sure to lift the noodles above the surface when pouring the egg to coat the noodles evenly. add spring onions and very thinly cut brisket along with the seasoning packet. cook till the eggs are done.
