Hello all,
As some of you may have noticed I haven't been very active on JB or forums for about 2 months so I thought I'd give you an update on yaboi Pstraw
I had been working 65+ hours a week with no vacations for the past year and a half after being laid off from my teaching job. So I moped around for a solid two months and then finally decided I needed to man up and take a job, any job, even if it was below my inflated ego and masters degree. I took a restaurant job as a cook and I have to say I've grown to really like it. I got promoted to sous chef last month after creating two new spring menus from scratch and proving my dedication to the establishment. If I had to give advice to anyone in a similar position working in what seems like a dead end job that they think they are overqualified for I would say no matter what you do, putting your whole self into it can do wonders. I started out getting motivated to improve even when I was just a prep boy at this restaurant. I brought a stopwatch with me everyday and timed how long it would take me to do the menial tasks that every new chef gets started on. How fast could I cut a 50 lb bag of potatoes or how long I could keep from crying when julienning 30 spanish onions. Even though I know have a number of trainees to do the grunt work for me, I still arrive an hour or 2 early every morning to time myself and make sure I am still improving.

It is the outside observer that interprets Sisyphos's task of pushing a boulder up a hill as menial and torturous. Sisyphos however is the one who actually decides whether there is meaning in it and if he enjoys it.

Also on a side note I received medium grants from the NEA for art proposals I wrote, and will be showing two public exhibitions this coming march. One is in Seattle, and the other is in Chicago so if you live in either of these cities and wanna check my shit out hmu!

Be good!

I wouldn't say I have a single signature dish but I do have a pretty mean pistachio crusted skin on salmon marinated in fresh dill and capers. Served with 2 scallops pan seared wrapped in bacon all served atop home made fried polenta cakes. shits fire

P.S. I meant to ask how you all are doing! Update me!
